    In Paris, Burgers Turn Chic

     EVEN if you couldn’t be on the Champs-Élysées for Bastille Day on Monday to watch seven parachutists float down in front of President Nicolas Sarkozy, you can still celebrate the greatness of France with a new local tradition.

    Eat a hamburger.

    Beginning a few years ago but picking up momentum in the past nine months, hamburgers and cheeseburgers have invaded the city.

    Anywhere tourists are likely to go this summer — in St.-Germain cafes, in fashion-world hangouts, even in restaurants run by three-star chefs — they are likely to find a juicy beef patty, almost invariably on a sesame seed bun.

    It is a startling turnaround in a country where a chef once sued McDonald’s for $2.7 million in damages over a poster that suggested he was dreaming of a Big Mac. Hamburgers were everything that French dining is not: informal, messy, fast and foreign.

    But as French chefs have embraced the quintessentially American food, they have also made it their own, incorporating Gallic flourishes like cornichons, fleur de sel and fresh thyme. These attempts to translate the burger, or maybe even improve it, strongly suggest that it is here to stay.

The burger has become gastronomic.”

    Some of the most celebrated chefs in the city have taken up the challenge. Yannick Alléno, who earned a third Michelin star in 2007 for his precise, rarefied cuisine at Le Meurice, serves a thick, succulent hamburger at his casual restaurant, Le Dali. Mr. Alléno’s baker, Frédéric Lalos, a winner of one of the country’s fiercest cooking competitions, makes the buns. With smoked bacon, lettuce, dill pickles, mustard, mayonnaise and fries, the burger at Le Dali costs 35 euros, about $56.

    The only thing more surprising than the about-face in chefs’ attitudes may be the enthusiasm with which their patrons have devoured these haute burgers.

    “I didn’t think we would sell so many,” said Sonia Ezgulian, guest chef at Café Salle Pleyel, which Ms. Samuel opened last fall in an airy, modernist space inside one of Paris’s most prestigious concert halls.

    IT is not as if hamburgers were unknown in Paris. American restaurants here like Joe Allen have long served them. Ms. Grasser-Hermé ate her first in 1961 at the American Legion, 11 years before McDonald’s unveiled its golden arches in France. But with few exceptions the local burgers were flat, overcooked and shunned even by American expatriates.

    Other forms of ground or chopped beef have been enjoyed here for years as well. Butchers sell kilos of ground meat destined to become steak haché, a pan-seared patty made with lean meat, pressed into an oval, and served without a bun.

    China's economy slowed down for a fourth straight quarter as inflation eased in June, official figures showed on Thursday, giving more ammunition to advocates for a looser monetary policy.

    The latest reading was 1.8 percentage point lower than the same period last year, indicating the economy continued to decelerate in the second quarter after growing 10.6 percent in the previous three months.

    Lessons in Love, by Way of Economics

    AS my fine professor of economics at Columbia, C. Lowell Harriss (who just celebrated his 96th birthday) used to tell us, economics is the study of the allocation of scarce goods and services. What could be scarcer or more precious than love? It is rare, hard to come by and often fragile.

    My primary life study has been about love. Second comes economics, so here, in the form of a few rules, is a little amalgam of the two fields: the economics of love. (I last wrote about this subject 20 years or so ago, and it’s time to update it.)

    In general, and with rare exceptions, the returns in love situations are roughly proportional to the amount of time and devotion invested. The amount of love you get from an investment in love is correlated, if only roughly, to the amount of yourself you invest in the relationship.

    High-quality bonds consistently yield more return than junk, and so it is with high-quality love. As for the returns on bonds, I know that my comment will come as a surprise to people who have been brainwashed into thinking that junk bonds are free money. They aren’t. The data from the maven of bond research, W. Braddock Hickman, shows that junk debt outperforms high quality only in rare situations, because of the default risk.

    In love, the data is even clearer. Stay with high-quality human beings. And once you find you that are in a junk relationship, sell immediately. Junk situations can look appealing and seductive, but junk is junk. Be wary of it unless you control the market.

    Research pays off. The most appealing and seductive (that word again) exterior can hide the most danger and chance of loss. For most of us, diversification in love, at least beyond a very small number, is impossible, so it’s necessary to do a lot of research on the choice you make. It is a rare man or woman who can resist the outward and the surface. But exteriors can hide far too much.

At least most situations work out better this way. ( I am too old to consider short-term romantic events. Those were my life when Lyndon Johnson and Richard Nixon were in the White House.)

    The returns on your investment should at least equal the cost of the investment. If you are getting less back than you put in over a considerable period of time, back off.

    Long-term investment pays off. The impatient day player will fare poorly without inside information or market-controlling power. He or she will have a few good days but years of agony in the world of love.

    You need expectations that match reality before you can make some progress. There may be exceptions, but they are rare.

    When you have a winner, stick with your winner. Whether in love or in the stock market, winners are to be prized.

    Have a dog or many dogs or cats in your life. These are your anchors to windward and your unfailing source of love.

    Ben Franklin summed it up well. In times of stress, the three best things to have are an old dog, an old wife and ready money. How right he was.

    THERE is more that could be said about the economics of love, but these thoughts may divert you while you are thinking about your future.

    And let me close with another thought. I am far from glib about the economy. It has a lot of pitfalls facing it. As workers and investors, we know that many dangers lurk in our paths.

      两岸关系迈入新时代,本报发现台湾民众眼前关注的还是开放之后的经济利益,而大陆民众更在乎的则是台湾的观光价值。

    The cross-straits relations stepped in a new era (as the weekend charter flights with mainland tourists set off their first historical trip on July 4.) The cross-straits people focus on different point, the Taiwan people keen on the economic profit at the primary stage of the opening, while the mainland people pay more attention to the worthiness of the Taiwan tour.

    台北计程车司机林胜岳(60岁)就强烈表达反对两岸快速开放,质疑开放陆客观光与包机直航只利及既得利益者,负面效应却要台湾全民承担。

    LinShengyue, 60,a Taipei taxi driver cried out against the rapid opening of the cross-straits, he suspected that Taiwan’s opening to mainland tourists and the charter straight flight would only benefited those who with vested interest., and the negative effect would be taken by the Taiwan people.

    他说:反对开放并非歧视中国(大陆)旅客,但直航无法改变底层民众的生活,反而必须共同承担门户大开后,所产生的传染疾病及违法偷渡的隐忧。与其开放大陆客,不如设法争取更多日本旅客。

    He said: ”The opposing of opening has nothing to do with discriminating against the (mainland ) tourists, but the straight flight charters could not change the life of the people of bottom society, which while have to take on the risk of infected disease and illegal smuggling. It’s better to strive for more Japanese tourists than open to the mainland tourists.”

    不过,同样着眼经济利益的音乐娱乐业者钟尚旻(29岁),对开放周末包机则抱有一定的期待。他因为工作所需每半年必须搭机往返两岸,现在庆幸日后不需再耗时搭机中转香港,也可省下些许机票成本。

    But otherwise, some other people who also view on the economic profit like Zhongshangwen, a 29 year-old music and entertainment practitioner possess some expectation about the weekend charter flights. He needs to fly across-straights every half year because of work, now felicitately he need no longer to have a time-consuming transfer from Hongkong, and  maybe this would save money for tickets.

    钟尚旻认为,台湾人不需要对大陆有先入为主标签化的观念,毕竟就算是向其他地方开放,同样也有传染病或者偷渡客的问题,因此应该乐观看待开放政策加速两岸交流,带给台湾经济利益的好处

    Shang said,Taiwaners should not possess a “preconceived” and “labeled” concept, after all there are also the problems of infect diseases and illegal stowaway while opening to the other districts. So it should be optimistic to view the “ economic benefit brought about to Taiwan by the opening policy accelerating the intercommunication ”

    在海峡彼岸,尽管媒体报道向旅行社报名到台湾旅游的反应非常热烈,但台湾对部分大陆民众的吸引力和观光价值,在各种行政手续的牵绊和偏高费用下,显然还有待提升。

    On the other strait in mainland, despite some medias claimed that the Taiwan tour was very hot in the travel agencies, but  to most of the mainland tourist ,the appealing and worthiness of Taiwan tour need to be developed, in case of the diversionary administration procedure and the high fee.

    北京外企行政人员李晓梦(32岁)向本报表示,对台湾游没有太大兴趣。她说:台湾的物价比大陆高多了,如果从景色上来说,未必就比大陆更美,人文也不一定有大的差别。花这么大的成本,如果不能带来足够的效果,观光的价值不大。

    LIXiaomeng, 32, an administrative employee of a foreign enterprise in Beijing told the newspaper, she has not much interesting in Taiwan tour. She said, ”The price level in Taiwan is much higher than that in mainland, as for the scenery, maybe it’s not more beautiful than the mainland. Neither there is any difference in civilization of cross-straits. If it can’t bring about great impression to cost so much, it is not of much value.”

    不愿参加台湾旅游的广州统计师符梅(28岁)受访时也说:台湾的魅力源自细节,源自人们对生活的态度。如果去台湾,最想感受的是传统文化在台湾的发展,儒家思想在台湾的传承,而这些不在台湾小住一段时间无法体会,走马观花似的台湾游毫无意义。

    FuMei, a 28 year-old statistics in Guangzhou, who is unwilling to join the Taiwan tour, said when interviewed, “The charm of Taiwan comes from details, comes from the attitude to life. The most aspect I want to taste is the development of Chinese traditional culture and the descending of Confucianism in Taiwan, If I will go to Taiwan, But you can’t fully feel it to live in Taiwan for a short period of time. There are nonsense to have a glimpse sight-seeing Taiwan tour. ”

    她强调:而且价格相当不合理,台湾近在咫尺,团费却接近欧洲游,5万元(人民币,约1万新元)的押金,更让人非常不舒服。只要仍须押金,就不会考虑去台湾旅游。

    She emphasized, ”and that the price is fairly unreasonable, Taiwan is near at hand, the cost is close to that of the European tour, and the 50,000 Yuan deposit, which is furthermore making us feel bad. If only they need deposit, I will think about Taiwan tour.”

    台湾观光业者估计,有兴趣到台湾旅游的大陆民众预计有5000万人,这对去年仅接待不到400万名外国游客的台湾观光业来说,无疑是一个庞大的潜在市场。

    The Taiwan tourism administers estimate that there are about 50,000 thousand underlying tourists from mainland, which is really a huge market for Taiwan tourism, where had no more than 4,000 thousand foreign tourists last year.

    据大陆媒体观察,赴台游开放后,旅行社接到的咨询电话有显著部分是4560岁的中老年人,因为对他们来说,台湾游是一种爱国情结,既没有语言障碍,也没有太大的饮食文化差异,而810天的行程也更适合有足够闲暇时间的中老年人。

    According the mainland media, most of the request phones in the travel agencies are called by the mid-aged and old people, for them, traveling in Taiwan is a kind of patriotism, and the 8 to 10-day tour is fit for the mid-aged and old people who are with enough free time.

    北京退休教师王云清(63岁)表示非常想去台湾看一看。她说:祖国各地基本上都去过了,闭眼之前能去趟宝岛台湾也算是圆满了。

    WanYunqing, a 63-year old retired teacher in Beijing, said she is looking forward to have a look at Taiwan. She said,"I have been to most parts of our country and I hope I can tour Taiwan before leaving the world."

    Nutritionist and author Jonny Bowden has created several lists of healthful foods people should be eating but aren’t. But some of his favorites, like purslane, guava and goji berries, aren’t always available at regular grocery stores. I asked Dr. Bowden, author of “The 150 Healthiest Foods on Earth,” to update his list with some favorite foods that are easy to find but don’t always find their way into our shopping carts. Here’s his advice.
